2019 Sauvignon Blanc

The 2019 Mendocino County Sauvignon Blanc was grown on an old vine vineyard planted in the late 1970s in Potter Valley which is at the Northern end of the Ukiah region at about 1000 foot elevation.  While very hot throughout the growing season the nighttime temperature drop by 40-45 degrees which makes for small berries on tight cluster which lead to deeply concentrated flavors while retaining brighter acidity than most vineyard sites in California, especially in whites. Our wine  was naturally fermented in stainless steel then aged for 6 months in once used French oak barrels. Full bodied and richly textured, this wine has aromas of Bartlett pear and Macintosh apple. The palate shows nice concentration of flavor and finishes long and dry.

Winemaker Notes
Whole cluster pressed and native yeast fermented in stainless steel then aged in once used french oak barrels for 6 months. During the first 3 months in cask, we aged the wine on the lees, known in French as "sur lie" aging, with bi-weekly battonage to enhance the mid-palate mouthfeel and add complexity. After 90 days we racked the wine off its lees and returned it to barrel for another 3 months for the flavors to marry and mellow.
